Stuffed Portabella Mushrooms (Low Fat!) |

Delicious starter, or even a meal. Low fat too! Ingredients:
4 portabella mushrooms |
1 (4 1/2 ounce) package light boursin cheese |
2 tablespoons light butter |
1/4 cup chopped onion |
1 cup fresh spinach leaves |
Directions:
1. Combine cheese, butter, onion and spinach in a skillet over medium-low heat until cheese is melted. 2. Scrap the underside of the mushroom caps. Chop and add to skillet. 3. Fill each mushroom cap with 1/4 of the cheese mixture. 4. Bake at 350* for 15 minutes or until mushrooms are tender. |
