Stuffed Portabella Mushrooms |

A great appetizer to share with friends and family!! Ingredients:
2 large portabella mushrooms |
1/2 small onion, chopped |
1 (1 lb) package italian sausage |
2 tablespoons extra virgin olive oil |
1/4 cup breadcrumbs |
1/4 cup grated parmesan cheese |
salt and pepper, to taste |
Directions:
1. Remove and finely chop Mushroom Stems. 2. Brown and crumble Italian Sausage. 3. Put drained Sausage in a bowl. 4. Saute Mushroom Stems and finely chopped Onion until softened. 5. Put in bowl with Sausage. 6. Add Bread Crumbs and Parmesan Cheese. 7. Put Mushrooms, gill side down, on baking sheet. 8. Brush tops with 1/2 T Olive Oil. 9. Broil Mushrooms, 2-3 inches from heat, for 3 minutes. 10. Turn Mushrooms over and season with salt and pepper. 11. Broil another 1-2 minutes. 12. Add stuffing (sausage mixture). 13. Return to broiler until stuffing is golden brown, approximately 1-2 minutes. |
