Stuffed Peppers a La Mandykoury |

If you're like me and you love food, try this recipe for vegetarian stuffed peppers Ingredients:
3 bell peppers, large, green or red |
10 oz rice, bag steamfresh brown |
14 oz tomatoes, canned diced drained |
1/4 cup parsley, chopped, flat leaf |
1/2 tsp. cayenne pepper |
1 tsp. kosher salt |
1/2 tsp. black pepper |
1 tsp. garlic powder |
1/2 cup mozzarella cheese, reduced fat shredded divided |
Directions:
1. Cut each pepper in half, lengthwise and sprinkle with salt/pepper; place opening up in a baking sheet 2. Cook rice according to directions and place in a large bowl with tomatoes, parsley and seasonings 3. Evenly distribute rice mixture amoungst peppers and top evenly with cheese 4. Bake at 375 degrees for 30- 40 minutes or until the peppers are cooked and the cheese is bubbly |
