Stuffed Mussels With White Wine |

Tasty recipe to go with a nice dry white wine. I love mussels and was tired or just making them in a wine sauce. Something different. Ingredients:
1 1/2 lb of mussels ( i used italian mussels from the ligurian sea) |
2 large ripe vine tomatoes |
1/2 cup of bread crumbs |
1/2 cup of dry white wine |
1 spring rosemary |
1 tsp of chopped parsley |
2 large cloves garlic, chopped finely |
1/2 tsp of good quality saffron |
1/2 tsp of paprika dolce ( sweet italian paprika) |
1 egg |
1 tbs butter |
salt to taste |
Directions:
1. Scrub your mussels clean and remove the beards 2. Place a pan on Medium heat and add your butter, Tomatoes, Parsley, Rosemary, garlic, Saffron, Paprika and salt 3. When tomatoes are a little soft add your white wine and turn flame on high. 4. Add your mussels and cover. 5. After about 8 mins check to see if your mussles are all opened 6. Using a slotted spoon remove the mussels and discard the ones that are closed 7. Reduce the liquid until its about 1/2 cup ( use your judgment) 8. Remove the meat from the mussels and save the large shells 9. Chop the meat and in a mixing bowl combine with Egg and bread crumbs and your cooled cooking liquid. 10. Stuff one shell at a time and place on a baking tray. 11. Put under the broiler until nice and golden brown 12. Remove and serve with lemon and a nice chilled white wine. 13. * I used a Viognier from Sicily |
