These make a great appetizer and even an awesome breakfast. Ingredients:
4 to 6 mushrooms per person |
finely chopped onion to taste |
finely chopped celery to taste |
crisp cooked bacon, crumbled or cooked breakfast sausage |
1/2 cup of cheese, shredded |
4 large whole black olives, chopped |
freshly ground black pepper to taste |
sea salt to taste |
other ingredients if desired - jalapenos, sun dried tomatoes, zucchini, etc. |
Directions:
1. Wipe the mushrooms clean. Break or cut the stems off the mushrooms and dice the stems. 2. Heat a little bit of olive oil or butter in a skillet and add chopped mushroom stems, chopped onion, and celery. Saute until the onion is translucent. If adding zucchini or jalapenos, you can saute them with the rest of this stuff. 3. Mix the sauteed ingredients with the cooked meat, cheese, and olives. Stuff mixture into mushroom caps and bake at about 350 for 15 minutes until cheese is melted. |
