Loved stuffed mushrooms and needed something to balance out for vegetables that the kids would eat. Ingredients:
8 to 12 large mushrooms with stems |
chop up the stems part of the stuffing |
6 scallions, washed and chopped |
4 tablespoons of minced garlic |
1 to 1 1/2 cup shredded mozzarella cheese |
butter, soft |
Directions:
1. Preheat oven to 350 degrees. 2. First wash your mushrooms. Take the stems and chop them up. Set aside. Next chop up your scallions aka green onions. 3. In a sauce pan with butter cook your chopped stems with scallions and minced garlic. 4. Coat the inside and outside of your mushroom caps with soft butter. Put these on a cookie sheet with some space around them. 5. Once your stems, scallions and minced garlic is done cooking 6. (around 5 to ten minutes if that) 7. With a teaspoon, spoon into the caps top with shredded mozzarella cheese. Bake for 30 minutes til the cheese is melted. Let them cool for a few minutes then enjoy! |
