This is such a delicious appetizer, just use 24 smaller mushrooms, or as a side dish using 12 large mushrooms - very good!! Ingredients:
12 large mushrooms, stems removed and chopped (keep mushroom caps) |
1/4 cup crisco vegetable oil or 1/4 cup canola oil, divided |
1/2 cup green onion, chopped (approx. 6) |
2 garlic cloves, chopped |
3/4 cup breadcrumbs, preferably panko |
1/2 cup parmesan cheese |
1/2 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. Preheat oven to 350 degrees F Line a baking sheet with parchment paper. 2. Heat 3 tablespoons oil in a large skillet on medium heat. Cook chopped mushroom stems, green onions, and garlic for 5 minutes or until tender. Cool 10 minutes. 3. In a separate bowl, combine cooled mixture with remaining ingredients. 4. Place mushroom caps on prepared baking sheet. Btush with remaining 1 tablespoons oil and fill with cooled mixture. 5. Bake in preheated oven for 20 minutes. 6. TIP: Mushrooms can be assembled earlier in the day and refrigerated until ready to bake. |
