The yummiest stuffed mushrooms, I have ever had. My mother gave me this recipe. The original recipe calls for pepperoni and green pepper, but since I don't like either, I substituted sausage for them. Sometimes I have to adjust the cooking time in the microwave, it usually depends on the size of the mushroom caps that I am using. Good Luck and enjoy! Ingredients:
12 large mushroom caps |
1 tablespoon butter or 1 tablespoon margarine |
1 cup chopped onion |
1/4 cup diced italian sausage |
1/2 minced garlic clove |
1/4 cup cracker crumb |
1 1/2 tablespoons parmesan cheese |
2 teaspoons minced parsley |
1/8 teaspoon oregano |
1 dash salt and pepper |
Directions:
1. Wash mushrooms. 2. Remove and chop stems. 3. Set mushroom caps aside. 4. In skillet, combine chopped stems, butter, onion, sausage and garlic. 5. Cook on high for 2-3 minutes stir occasionally. 6. Remove from heat and add cracker crumbs, cheese, parsley, oregano and salt and pepper, stir to blend. 7. Mound mixture in mushroom caps and place in Pyrex baking dish. 8. Place in microwave and cook covered on high for 4 minutes or until hot. |
