I have been making these for about 25 years now! Just as good now as they were back then! VERY addicting! A classic stuffed mushroom! Ingredients:
1 lb fresh button mushroom, medium sized |
1/4 cup finely chopped onion |
1/4 cup finely chopped green bell pepper |
3 tablespoons butter |
1 1/2 cups soft breadcrumbs |
1/2 teaspoon salt |
1/2 teaspoon dried thyme |
1/2 teaspoon ground turmeric (optional) |
1/4 teaspoon pepper |
1 tablespoon butter |
Directions:
1. Wash and dry mushrooms. 2. Remove stems and chop fine to measure 1/3 cup. 3. In small frying pan, saute chopped mushroom stems, onion and green pepper in 3 Tbl. butter til soft. 4. Remove from heat and stir in rest of ingredients except whole mushroom caps. 5. Stuff mushroom caps with filling. 6. Melt 1 Tbl. butter. 7. Pour butter into shallow baking dish. 8. Place mushrooms in baking dish. 9. Bake 15 minutes in 350ยบ oven. 10. Raise oven temp to broil. 11. Broil, 3-4 from heat. 12. Broil 1-2 minutes. 13. Serve hot. 14. *You don't have to broil these if you prefer not to. |
