Ingredients:
4 ounces lowfat mozzarella cheese |
3/4 lb fresh spinach, steamed |
2 red bell peppers, sliced lengthwise |
1 tablespoon balsamic vinegar |
2 cups mixed salad greens |
2 tomatoes, sliced |
Directions:
1. Flatten fresh mozzarella to 1/2-inch width. 2. Layer with spinach and red peppers. 3. Roll up jelly roll fashion from longest end. 4. Slice and serve with greens, tomatoes slices drizzled with balsamic vinegar. |
