My mother-in-law's recipe for company meatloaf. Moist and delicious, never dry. Ingredients:
2 lbs lean ground beef |
1 large potato, raw, then grated |
1 teaspoon salt |
1/8 teaspoon black pepper |
1/2 onion, grated |
1/4 cup water |
1 egg |
1 cup breadcrumbs |
1/2 cup quick-cooking oatmeal |
1 carrot, grated |
1/8 teaspoon black pepper |
1 teaspoon salt |
1 cup water |
1 dash garlic salt |
4 tablespoons shortening, melted |
6 ounces tomato sauce |
1/2 cup water |
Directions:
1. Mix first 7 ingredients. 2. Spread mixture out in a rectangle to the depth of one inch. 3. Mix the next 8 ingredients. Spread on top of the hamburger mixture. 4. Roll up like a Jelly Roll, starting on the long side. Seal edge closed. Bake at 350 degrees for 30 minutes. 5. Mix tomato sauce and 1/2 cup water and pour over the rolled hamburger. Bake an additional 30-45 minutes. 6. Variations: 7. Place 3 Hard Boiled Eggs (sliced) on top of stuffing before rolling up. 8. Parboil potatoes and place around roll before adding sauce mixture. |
