This has a middle layer of stuffing which sets it apart from traditional meatloaves. Ingredients:
2 eggs |
2 tablespoons milk |
1/4 cup ketchup |
1 1/2 teaspoons salt |
1/8 teaspoon pepper |
1 1/2 lbs lean ground beef |
1/2 lb fresh mushrooms, sliced |
1 medium onion, chopped |
2 tablespoons margarine |
2 cups soft breadcrumbs |
2 tablespoons chopped fresh parsley |
1/2 teaspoon dried thyme |
1/2 teaspoon salt |
1/8 teaspoon pepper |
Directions:
1. In a large bowl beat the eggs, ketchup, milk, salt and pepper. 2. Add beef and mix well. 3. Pat half of mixture into a greased loaf pan. 4. For the stuffing, saute the mushrooms and onion in the butter until tender, about 3 minute. 5. Add breadcrumbs, parsley, thyme and salt and pepper and cook until crumbs are lightly browned. 6. Spoon over meat layer. 7. Cover with remaining meat mixture and press down gently. 8. Bake at 350ºF for 1 hour or no longer pink. Drain fat when necessary. |
