This is good to start a meal and it's a twist on a plain old salad. It could also be a light lunch. I had fun with it and it was hit with my guests. Use any variation of vegetables and cheese that you'd like! Ingredients:
1 nice large head of iceberg lettuce |
4 oz. of cream cheese |
3 tablespoons crumbled blue cheese |
2 tablespoons grated raw carrot |
2 tablespoons green pepper, minced |
3 tablespoons fresh tomato, diced |
1 teaspoon parsley |
2 tablespoons bacon pieces, optional |
salt and pepper to taste |
4 tablespoons mayonnaise |
Directions:
1. Wash lettuce well. 2. Remove core from center of lettuce making it a bowl . 3. In a mixing bowl, blend together mayonnaise, cream cheese, blue cheese, carrot, pepper, tomato, bacon, parsley, salt and pepper. 4. Mix until well blended. 5. Pack mixture firmly into the center of the lettuce bowl . 6. Wrap lettuce in a clean, damp cloth. 7. Chill 2 hours. 8. When ready to serve, slice the lettuce crosswise so that each portion has the cheese center. 9. Garnish with shredded radishes if desired. |
