Stuffed Jalapenos With Tuna and Walnuts |

Before you say, Yuk! , I have to say that pickled jalapeno peppers are really good stuffed with tuna. While I have not tried tuna stuffed peppers with cream cheese & mayo, I'm willing to give them a try. No cooking involved. Ingredients:
1 (11 ounce) can mild pickled jalapeno peppers (whole) |
1 (3 ounce) package cream cheese, softened |
1/4 cup mayonnaise |
1 (7 ounce) can solid white tuna (packed in water and drained) |
2 tablespoons lemon juice |
1/4 cup walnuts, chopped |
Directions:
1. Slice whole jalapenos in half; remove seeds, drain and soak in ice water. 2. In a bowl combine the cream cheese, mayonnaise, tuna, lemon juice and walnuts and mix well. Stuff each pepper half with the cream cheese filling. |
