every wonder what to do with your left-over mashed potatoes? My mom used to whip these up for an afternoon snack. Ingredients:
1 pack hotdogs |
2 c of mashed potatoes (fresh of from previous day) |
2 tbsp mustard |
1/2 c grated cheese |
Directions:
1. make a small pot of mashed potatoes (or use leftover from previous day) 2. -peel and dice about 6 medium potatoes 3. -add enough water to cover them completely, and a sprinkle of salt 4. -boil for about 10 min, or they fall apart when a fork is inserted through the center 5. -drain and add 1 tbsp butter and 1/3 c milk 6. -mix with a blender until light and fluffy 7. mix in mustard to make it a yellowish colour 8. set potato mix aside 9. Slice hotdogs across lengthwise not quite going all the way through 10. place on a baking sheet so none are touching its neighbour 11. add potato mixture to the slice in the hotdogs (should be bursting over the top 12. Sprinkle the top of the potatoes with enough cheese to coat. doesn't take much 13. bake in pre-heated oven 400 for 10 min or until cheese is melted and hotdogs are heated through 14. *note: you can make these and slice the u for a great party appatiser |
