Stuffed Green Peppers, with Turkey Meat |

This is a modified (lower cal) version of the classic Better Homes and Gardens stuffed green pepper recipe Ingredients:
6 green bell peppers |
1 lb. lean ground turkey |
1 onion, chopped |
16 oz. tomatoes, undrained |
1/2 cup uncooked brown rice |
1 tsp worcestershire sauce |
1/2 cup water |
1 cup cheddar cheese, shredded |
Directions:
1. Cut tops off of peppers. Remove seeds and membrane. Scallop edges, if desired. 2. Cook peppers in boiling, salted water apx. 5 minutes. Invert to drain well. Lightly salt the insides and set aside. 3. Chop 1/4 cup's worth of the removed tops. 4. Chop the onion. 5. Brown meat with onion and peppers. Drain fat. 6. Add tomatoes, uncooked rice, worcestershire sauce, and water. Bring to a boil. 7. Reduce heat, cover and simmer 15 minutes. Stir in cheese. 8. Stuff peppers with meat mixture. 9. Spray a baking dish with cooking spray. Place peppers in baking dish. 10. Bake, covered, at 350 degrees for 20-25 minutes. |
