Stuffed Green Peppers

Stuffed green peppers are one of my husband and my favorite meals because they are like indivudual mini casseroles and are so tasty and quick to make.
Ingredients:
1 large green bell pepper cut in half and cored
2 cloves of garlic chopped
1/4 of a small onion chopped
4 oz. ground sausage
1 cup chopped mushrooms
1/4 cup shredded cabage ( red or green)
1/4 cup grated carrots or zuchini (optional)
1/2-3/4 cooked basmati rice (white or brown)
1/2 grated cheese of choice
red pepper flakes
sea salt
pepper
Directions:
1. Preheat oven to 375.
2. Boil 1 3/4 cup water with a pinch of salt, add 1 cup basmati rice and cook about 10 minutes covered until well steamed, later measure out approx. 1/2-3/4 cup cooked rice, (depends on size of peppers).
3. Meanwhile saute ground sausage, onion, garlic. When sausage is cooked through add chopped mushrooms, shredded cabbage, shredded carrots or zuchini, red pepper flakes ( just a pinch), sea salt, and pepper to taste.
4. Mix 1/2 a cup cooked rice with sausage mixture and spoon into halfed green peppers until full. It helps to have a small square pyrex the so the peppers are snug together and won't tip.
5. Top each with 1/4 cup of your favorite cheese and bake until cheese is melted and peppers are cooked through, about 15-20 minutes.
