Vegetarian, low fat stuffed green peppers Ingredients:
4 green peppers |
1 cup brown rice |
311 g yellow corn |
437 g black beans |
1 cup salsa |
1/2 cup low fat, cheddar or colby cheese |
Directions:
1. Blanch green peppers for about 5-10 minutes 2. Prepare rice 3. Add can corn, black beans, salsa, cheddar, mix well 4. Fill peppers, top with cheese 5. Bake for about 20 minutes at 350 F. |
