Great recipe my wife found in an international cookbook years ago. We have made it many times and neither of us have messed it up Ingredients:
4 bell peppers |
1 lb ground beef |
1 small onion, chopped |
2 minced garlic cloves (we like garlic so i add more) |
1 teaspoon italian seasoning |
salt and pepper |
1 (14 1/2 ounce) can diced tomatoes |
1 (8 ounce) can tomato sauce |
1/4 cup water |
1 cup instant rice |
mozzarella cheese |
Directions:
1. Cut tops off of Peppers and remove seeds and membranes. Parboil about 5 minutes and drain. 2. Saute ground beef, onions, garlic and chopped pieces of tops in large skillet until lightly browned. Drain. 3. Add Italian seasonings,salt and pepper,tomatoes, 1/2 can of tomato sauce,water and rice. 4. Stir well. 5. Bring to a boil. reduce heat to low and cook covered for 15 minutes. 6. Place peppers in casserole dish. Stuff meat mixture in the peppers and spoon remaining mixture around the peppers. Top with the remaining tomato sauce.Cover and cook 30 minutes at 350 degrees F. Uncover, Top with cheese and cook 10 more minutes. |
