This is a french toast recipe I've used for years. It's a nice Christmas morning tradition. Or for holiday company. You can use what ever berries you like. Ingredients:
2 cups mixed berries (your choice) |
2 tb. sugar |
2/3 cup ricotts cheese (the lowfat works well) |
1/4 cup strawberry preserves |
3 eggs |
2/3 cup carnation evaporated milk |
2 tb brown sugar (pack) |
2 tea. vanilla extract |
12 slices of the thinner french bread (about 1/2-3/4 ) |
butter |
powdered sugar |
maple syrup (warmed) or fruit syrup |
whipped cream garnishment |
Directions:
1. Put berries and sugar in small bowl set aside. 2. Mix ricotta and preserves in another small bowl 3. Combine eggs, evaporated milk, brown sugar and extract. Put this in a shallow plate and mix well 4. Use Ricotta mixture and spread like peanut butter on 6 slices of bread. Once the mixture is spread, use other slice to make a sandwich top. 5. Heat small amount oil in nonstick skillet. A griddle works well too. Heat to a medium temp. Dip each sandwich in egg mixture, making sure to get both sides. Cook each side for 2 minutes or till golden. 6. Sprinkle powdered sugar on top and then top with berries and maple syrup; |
