Baked flounder fillets
Ingredients:
8 ounces flounder
4 ounces scallops (4 medium)
1 tbsp butter
1/4 cup breadcrumbs
1/4 cup scallions
2 cloves garlic
1 tsp cayenne pepper
1 egg white
1/2 tsp ginger
1 tsp olive oil
Directions:
1. Marinate scallops and flash in hot skillet with butter
2. Dip fillets in egg white, then roll in bread crumbs
3. Fold fillet over 2 scallops, chopped scallions
4. Bake 400F for 20 minutes, or until fish is white and flaky
