Simple snack or desert. Adapted from The International Menu Diabetic Cookbook. Original recipe uses diabetic creative cream cheese. Ingredients:
4 large figs or 8 dried figs |
8 almonds, blanched |
cream cheese |
Directions:
1. Preheat oven to 325-degrees F. 2. Cut stems off figs and split lengthwise. 3. Stuff each with 2 almonds and pinch closed. 4. Arrange on cookie sheet. 5. Bake for 10 minutes. 6. Serve at room temperature with 1 Tablespoon cream cheese. |
