Stuffed Eggs With Mushroom Sauce |

These are great if you're having a casual breakfast with friends. Add these to your breakfast table with bagels, muffins and fruit. Don't forget the coffee and juice ; ) Ingredients:
8 eggs, hard-cooked |
1/2 cup finely chopped cooked ham |
dry mustard powder to taste |
onion powder to taste |
salt and pepper, to taste |
1/4 cup mayonnaise |
1/2 cup butter, 2 tablespoons of it melted |
1-1/2 cups sliced fresh mushrooms |
1/3 cup all-purpose flour |
1/4 teaspoon thyme leaves |
2 cups milk |
3/4 cup chicken broth |
1/2 cup dry bread crumbs |
shredded mozzarella cheese |
Directions:
1. Heat oven to 350°. 2. Remove shells from hard-cooked eggs. 3. Halve eggs lengthwise. 4. Carefully remove yolks and place them in a bowl. 5. Add ham, mustard powder, onion powder, salt, pepper, and mayonnaise. 6. Blend well. 7. Fill egg white halves with yolk mixture and set aside. 8. Melt about 1/3 cup butter in a saucepan over medium heat. 9. Add mushrooms, cook and stir until tender. 10. Stir in flour, thyme, salt and pepper. 11. Cook 1 minute until smooth and bubbly, stirring constantly. 12. Gradually stir in milk and chicken broth. 13. Cook sauce over medium heat until slightly thickened and bubbly, stirring constantly. 14. Spoon about 1 cup of the sauce into the bottom of a 12x8-inch baking dish. 15. Arrange egg halves over sauce. 16. Spoon remaining sauce over egg halves. 17. In a small bowl, combine 2 tablespoons melted butter and bread crumbs. 18. Sprinkle evenly over eggs 19. Bake for 20 minutes. 20. Sprinkle with shredded mozzarella cheese. 21. Bake an additional 5 minutes or until cheese is melted. |
