Eggplant stuffed with hamburger and seasoning. Great main course! Ingredients:
1 large eggplant |
1 tbsp olive oil |
2 tbsp butter |
1 cup chopped green onion |
2 tbsp chopped fresh parsley |
1 tbsp chopped garlic |
3/4 tsp salt |
3/4 tsp pepper |
1 lb hamburger meat |
1 cup seasoned bread crumbs |
1 3/4 cup shredded mozzarella cheese |
3/4 cup parmesan cheese |
Directions:
1. Cut eggplant in half lenghtwise; rub the cut surface with olive oil and place cut side down in baking pan for 20 minutes. Scoop out eggplant leaving sheel intact for stuffing. 2. Brown hamburger meat; drain and rinse 3. Melt butter in skillet; add the green onion, parsley, and garlic. Saute until onion is tender, about 2-3 minutes. Add eggplant and simmer for 2 minutes. Take mixture off heat and add to browned meat. Stuff shells with mixture and sprikle with parmesan cheese. Cover with breadcrumbs and mozzerella cheese. Bake at 350 degrees for 20 to 25 minutes. |
