Stuffed Dates With Sea Salt |

I adapted this from an amuse bouche I had at Komi in Washington DC. It is very simple and fast to prepare, but impressive. Ingredients:
1 (approx 8 oz) package medjool dates, pitted |
4 oz mascarpone cheese |
a few teaspoons of high quality extra virgin olive oil |
fleur de sel |
Directions:
1. Pit the dates and use your finger or the end of a spoon to bore out a little canal in the middle of each. 2. Pipe the mascarpone into a pastry bag, or a disposable plastic bag with one tip cut off. 3. Fill each date with mascarpone and arrange on serving tray. 4. Drizzle olive oil over dates, and top with a sprinkle of fleur de sel. |
