Great way to use all the garden cucumbers I get around the end of summer. Any ground meat would work, we use venison burger if we have any left. Ingredients:
1 lb ground beef |
1 tablespoon oil |
1 teaspoon salt |
1 tablespoon soy sauce |
1 tablespoon cornstarch |
1 tablespoon diced onion |
1/4 cup finely diced celery |
4 large cucumbers |
2 cups beef bouillon |
2 tablespoons cornstarch |
2 tablespoons soy sauce |
1/2 cup water |
Directions:
1. Remove part or all of the skin on cucumbers. 2. Cut cucumbers into 2 slices and scoop out the seeds. 3. Mix beef, salt, soy sauce, corn starch, onion, & celery in a large bowl. 4. Fill cucumber slices with beef mixture. 5. Heat oil in a large skillet over medium heat. 6. Add stuffed cucumber slices and bouillon, cover and cook for 10 minutes. 7. Turn heat down, simmer for another 30 minutes. 8. Transfer cucumbers slices to a plate, pour sauce over them and serve. |
