Chicken stuffed with tomato, mushroom and basil. Ingredients:
2 lbs. (4 pieces) chicken breasts, boneless skinless |
1/2 cup tomato, diced |
1/2 cup fresh mushrooms, sliced |
1/2 cup parmesan cheese, grated |
1 cup italian style bread crumbs |
1 1/2 cup fresh basil |
2 garlic cloves, minced |
Directions:
1. Pound chicken breast thin. 2. Mix half the Parmesan cheese with the bread crumbs. 3. Moisten chicken breasts with water and coat in bread crumb/Parmesan cheese mixture. Lay breaded chicken breasts out flat. 4. Mix mushrooms, tomatoes, basil, remaining Parmesan, and garlic. Put equal amounts of the mixture into the center of each breast. 5. Roll up chicken and hold together with toothpicks, if needed. 6. Bake in a 400°F degree oven for 30 to 35 minutes. |
