Stuffed Chicken Breats Caprese |

Tender chicken breast stuffed with mozzarella and basil, served with fresh sliced tomatoes. Each serving is half a chicken breast in this recipe. Ingredients:
3 chicken breast, boneless skinless |
3 oz. low fat mozzarella |
1 1/2 tbsp. olive oil, extra light tasting |
2 tsp. italian seasoning |
2 tsp. garlic, crushed |
12 leaves basil |
3 medium tomatos, sliced |
Directions:
1. Preheat oven to 350 F. 2. Mix the olive oil, italian seasonings, and crushed garlic in a small bowl. Brush the bottom of a glass baking pan with 1/3 of the olive oil mixture. 3. Place the chicken breasts in the pan and brush the top with the remaining olive oil mixture. 4. Place 6 basil leaves around the chicken in the pan and cover the pan with foil. 5. Bake the chicken at 350 F for about 30-35 minutes, or until done. 6. While the chicken is baking, chop the remaining basil and slice the mozzarella into thin strips. Set aside. 7. Once chicken is done, let cool for about 10-15 minutes then slice each breast in half (cut between the top and bottom). 8. Layer mozzarella and chopped basil between the halves of chicken. Bake at 400 F, still covered with foil, for about 10 minutes or until mozzarella is melted. 9. While the cheese is melting, cut the tomatos into round slices. Serve a few slices with each piece of chicken. 10. Enjoy! |
