Stuffed Capsicums With A Twist |

A great starter for any meal. Ingredients:
stuffed capsicums |
whole capsicums, stem removed and deseeded |
salad for stuffing |
cherry tomatoes, halved or quartered |
basil, chopped |
garlic, chopped |
sweet chillies, finely sliced |
oil |
wine vinegar |
salt |
pepper |
topping |
pancetta slices or bacon |
to serve |
thick toast slices |
ricotta and rocket salad, dressed with your favourite dressing |
Directions:
1. STUFFING 2. Place all ingredients into a bowl and mix 3. PEPPERS 4. Place salad stuffing into the prepared peppers and top with pancetta/bacon 5. Place into a baking tray and cover with foil 6. Bake in a moderate oven for 10-15 minutes 7. Take the foil off for the last few minutes to crisp the pancetta/bacon 8. SALAD 9. Toss rocket leaves with ricotta and dress 10. TO SERVE 11. Place salad and thick crusty toast on to a plate and top the toast with the roasted capsicum |
