Stuffed Bell Peppers with ground beef, onion, tomatoes, rice-1 serving is 1/2 of a stuffed pepper (cut peppers lengthwise) Ingredients:
1 cup brown rice |
1 pound ground beef, fat drained |
15 ounce tomatoes, diced |
1/2 yellow onion, diced |
2 cloves garlic, diced |
1 teaspoon salt |
1 tablespoon pepper |
3 green bell peppers |
Directions:
1. prepare 1 cup of brown rice as normal 2. brown 1 lb of ground beef, and drain fat 3. add to the ground beef: canned tomatoes, onion, garlic, salt and pepper-simmer 4. mix prepared rice and beef mixture 5. cut bell peppers length-wise in half (scoop out seeds) 6. place bell pepper halves in baking dish and scoop meat/rice mixture into peppers 7. bake at 350 for approximately 1 hour or until peppers cooked as desired |
