These are yummy. My husband doesn't care for bell peppers but he loves to just eat the insides. I will also used spanish rice instead of white rice to give it some more flavor. Ingredients:
6 large green peppers |
1 lb ground beef or 1 lb turkey |
3 tablespoons white onions, chopped |
1 cup cooked white rice |
2 teaspoons salt |
1/4 teaspoon garlic powder |
1/2 teaspoon cumin |
1 (15 ounce) can tomato sauce, divided |
3/4 cup shredded mozzarella cheese |
Directions:
1. Preheat oven to 325. 2. Cut off the stem of the bell pepper and remove seeds and membranes; rinse pepper. 3. Submerge peppers in boiling water for 2-3 minutes; remove and drain. 4. Fry meat and onion in a pan until thoroughly cooked; drain off juices. 5. Stir in rice, salt, garlic powder, cumin and 1 cup of the tomato sauce. Heat on stove until bubbling. 6. Stuff peppers with beef mixture. 7. Stand upright in square baking dish. 8. Pour remaining tomato sauce over pepper, cover, and bake for 30 minutes. Uncover peppers and top with cheese. 9. Cook an additional 15 minutes. |
