STUFFED BEETS This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Crawford Estate in Quinlan, Texas in 1982. Ingredients:
6 large beets |
1/4 cup whipped cream |
1 teaspoon whipped cream |
1/2 teaspoon salt |
1 teaspoon freshly ground black pepper |
Directions:
1. Cook beets thoroughly then remove from fire and chill in refrigerator. 2. Peel and hollow out centers. 3. Combine remaining ingredients then stuff beets. 4. Chill and serve cold. |
