Yummy. Ingredients:
6 medium orange fleshed sweet potatoes |
1/2 cup orange juice |
3 tablespoons butter |
1 teaspoon salt |
8 ounce can crushed drained pineapple |
1/2 cup chopped pecans |
Directions:
1. Bake potatoes at 375 for 1 hour. 2. Cut a 1 inch lengthwise strip from top of each potato and scoop pulp from shell. 3. Combine pulp, orange juice, butter and salt then gently stir in pineapple. 4. Stuff shells with mixture and sprinkle with pecans. 5. Bake at 375 for 10 minutes. |
