I got this recipe from a friend and I love it! Its total comfort food and I love that I can make it ahead and then just pop it in the oven when I need it! Ingredients:
3 large baking potatoes, cooked (either bake in oven or microwave) |
1/4-1/2 cup softened butter |
1/2 cup sour cream |
1/4 cup milk |
1 cup or more shredded cheddar cheese, divided |
1 tsp seasoning salt |
1 tsp pepper |
1 tbsp chives |
Directions:
1. Scoop out the potato pulp and place in large bowl. 2. Add rest of ingredients (saving a little cheese for the top of potatoes). Mash altogether. 3. Sprinkle with remaining cheese and drizzle a little melted butter on each potato. 4. Place on cookie sheet and bake at 350 for 1/2 hour. 5. Can be stuffed ahead of time, might need to baked longer! |
