An unconventional stuffed potato recipe. This one is good for you and great tasting! Ingredients:
1 russet potato (scrubbed and baked) |
1 avocado, smashed |
1 carrot, shredded |
1/4 cup red onion, diced |
1 -2 tablespoon salsa |
salt and pepper |
Directions:
1. Slice the baked potato down the middle and smash it up a bit so soften the flesh and flatten out. 2. Salt and pepper to taste. 3. Top with smashed avacado, shredded carrots, diced onions, and salsa. 4. Dig in and enjoy! |
