The Vegetarian Kitchen Table Cookbook Ingredients:
2 avocados |
1 roma tomato, diced |
2 tablespoons finely sliced sweet onions |
1 lime, juice of |
2 sprigs cilantro, chopped |
1 belgian endive, thinly sliced |
salt |
hot pepper sauce |
Directions:
1. Cut avocados in half and remove seeds. Scoop out flesh, taking care to not break shell. 2. In a bowl, mash together avocado, tomato, onion, lime juice, cilantro, endive, and salt and pepper to taste. 3. Fill avocado shells with mixture. Garnish with more chopped cilantro and endive. |
