This makes a very colorful, picturesque side dish for a holiday dinner, especially in Autumn. Ingredients:
2 medium acorn squash |
olive oil |
1 pkg stove top stuffing mix® or any leftover stuffing, enough to serve 4 |
leftover giblet, turkey or pork gravy |
pan spray |
Directions:
1. Preheat oven to 400F deg. Place rack at the middle level. 2. Split acorn squash in half, lengthwise. Scoop out seeds; Take a tiny slice off the side bottom of each squash half, so that it will sit stable for baking and serving. 3. Place the 4 squash halves on a sprayed, foil-lined jelly roll pan; brush cut surfaces and insides of squash with olive oil. Place in the oven. 4. Bake for 1 hour. 5. Meanwhile, prepare the stuffing mix as directed, and heat the gravy. 6. At the end of 1 hour, remove the jelly roll pan from the oven. Divide stuffing evenly and spoon into the 4 squash halves, heaping it slightly. 7. Place the pan back into the oven for another 15 minutes, allowing the squash to finish baking to a soft texture and for the stuffing to heat through. 8. When ready to serve, spoon some gravy over, if desired. 9. Enjoy!! |
