Beans with a zing! Ingredients:
16 ounces string beans, cut lengthwise |
2 teaspoons olive oil |
2 teaspoons onion, minced |
1 clove garlic, finely minced |
14 ounces tomatoes , canned, diced, low sodium |
1 chili pepper, green , diced |
8 ounces chicken broth , low sodium |
1/4 teaspoon cumin |
1 fresh ground pepper |
1/4 teaspoon oregano, optional |
Directions:
1. Saute onion and chili in hot oil. Add tomatoes, beans, and broth. Season and cover tightly; cook until beans are just tender. A little oregano rubbed between the palms of the hands is a nice addition, if you wish; add with the other seasonings. |
