Beans with a zing!
Ingredients:
16 ounces string beans, cut lengthwise
2 teaspoons olive oil
2 teaspoons onion, minced
1 clove garlic, finely minced
14 ounces tomatoes , canned, diced, low sodium
1 chili pepper, green , diced
8 ounces chicken broth , low sodium
1/4 teaspoon cumin
1 fresh ground pepper
1/4 teaspoon oregano, optional
Directions:
1. Saute onion and chili in hot oil. Add tomatoes, beans, and broth. Season and cover tightly; cook until beans are just tender. A little oregano rubbed between the palms of the hands is a nice addition, if you wish; add with the other seasonings.
