String Beans In Tarragon Pesto |

tarragon, a differntly delicious pesto recipe Ingredients:
1 pound string beans or french beans, tipped and blanched, drained and cooled |
salt |
1 bunch tarragon, leaves only |
1 small garlic clove, peeled |
grated zest of 1 lemon |
freshly ground pepper |
1/2 cup extra-virgin olive oil |
1 purple onion, halved, thinly sliced |
julienned zest of 1 lemon |
Directions:
1. Make the string beans: 2. Bring 6 quarts of water to a boil. 3. Add the string beans and salt; cook 7 minutes, or until crisp tender. 4. Drain, then place in a bowl of ice water; drain again and place in a bowl. 5. Make the pesto: 6. Place the tarragon, garlic, grated lemon zest, salt, and pepper in a food processor. 7. Add the olive oil with the motor running; process until the mixture is emulsified. 8. Toss the beans with the pesto, onion, and julienned lemon zest. 9. Serve within 30 minutes. |
