Streusel Topped Pecan Muffins |

The brown sugar, butter and pecans used in this muffin are a nod to Pecan Pie and the rich topping takes it over that edge! These are a rich, heavy muffin due to the pecans, so they won't get the beautiful rounded tops I prefer, but they make up for their lack of beauty with their taste! Read more ! Ingredients:
for muffins |
2 sticks butter, room temperature |
1 cup brown sugar |
1/3 cup granulated sugar |
2 eggs |
4t vanilla |
3t baking powder |
1 1/2t baking soda |
1 cup all purpose flour |
1/2 cup pecans, finely chopped or crushed |
1/2 cup buttermilk(*****please note, this is edited from the previous amount of 1 cup after an error was pointed out!) |
for streusel topping |
1/2 cup pecans, finely chopped or crushed |
3-4t butter, slightly softened |
1/2t vanilla |
2/3 cups brown sugar |
(couple t flour or baking mix, if needed to make topping a bit more crumbly , please do not try to use extra pecans, as this will likely sink your muffins...and don't ask me how i know this ;) |
Directions:
1. Cream butter and sugar in electric or stand mixer until fluffy 2. Add vanilla 3. Add eggs, one at at time, mixing well after each one 4. In medium mixing bowl, combine all remaining ingredients except for buttermilk 5. Add dry ingredients alternately with butter milk either by hand, or on lowest speed of mixer and mix only until combined 6. Let rest while you prepare the topping 7. Topping 8. Combine all ingredients in small glass bowl using pastry blender, potato masher, two forks, or hands(my favorite kitchen tools!) adding a bit of flour or baking mix, if needed, to get a thick, SLIGHTLY crumbly mixture 9. Spoon muffin batter into regular sized muffin tins WITH cupcake liners(I prefer x-large, wonderfully shaped muffins, usually, but the jumbo muffin tins really don't work as well for this muffin, in my opinion), about 3/4 full. 10. Top each muffin with streusel mix 11. Bake at 350 for about 25 minutes until edges are golden brown and toothpick comes out ALMOST clean. |
