Found this recipe on submitted by Shelley Balint. Can use fresh or frozen rhubarb. Ingredients:
1 cup all-purpose flour |
1/3 cup confectioners' sugar |
1/3 cup butter, cold |
1 1/4 cups sugar |
1/4 cup all-purpose flour |
1/2 teaspoon salt |
2 eggs, lightly beaten |
3 cups rhubarb, chopped |
3/4 cup all-purpose flour |
1/2 cup sugar |
1/4 teaspoon cinnamon |
1/3 cup butter, cold |
Directions:
1. In a bowl, combine flour and confectioners sugar. 2. Cut in butter until crumbly. 3. Press into a greased 9 inch square baking dish. 4. Bake at 350 degrees F for 15-18 minutes or until brown around the edges. 5. Meanwhile, in a large bowl, combine the sugar, flour and salt. 6. Add eggs; mix well. 7. Fold in the rhubarb. 8. Pour over crust. 9. For topping, combine the flour, sugar and cinnamon in a small bowl; cut in butter until crumbly. 10. Sprinkle over filling. 11. Bake at 350 degrees F for 45-50 minutes or until rhubarb in bubbly. 12. Cool on wire rack. |
