This muffin recipe comes from The best Diabetes Cookbook. Ingredients:
1/2 cup brown sugar |
1/2 cup applesauce |
1/4 cup canola oil |
1 egg |
1 teaspoon vanilla |
1 cup flour |
1 teaspoon baking soda |
1 teaspoon baking powder |
1/2 teaspoon cinnamon |
1/2 cup raisins |
3/4 cup diced peeled apple |
2 tablespoons brown sugar |
2 teaspoons flour |
1/2 teaspoon cinnamon |
1 teaspoon butter |
Directions:
1. Preheat oven to 375 degrees, spray 12 muffin cups with nonstick spray or use paper muffin cups. 2. In a large bowl, combine sugar, applesauce, oil, egg and vanilla until well mixed. 3. Combine flour, baking soda, baking powder and cinnamon; stir into bowl just until incorporated. 4. Stir in apples & raisins. 5. Pour into muffin cups, filling two-thirds full. 6. Topping: In a small bowl, combine sugar, flour, and cinnamon; cut in butter until crumbly. 7. Sprinkle evenly over muffins. 8. Bake for 20 minutes or until tops are firm to the touch. |
