Strawberry Yogurt Muffins |

These little guys are lovely with some tea for breakfast, or for a quick snack....just drizzle some honey over the top, or melt a bit of butter on 'em (or both!), and you're in business :) Ingredients:
2 cups all-purpose flour, plus a pinch more |
32 oz vanilla yogurt |
1 &1/2 cups fresh strawberries, diced |
4 tbsp honey |
1 cup vanilla almond milk |
1/4 cup coconut oil |
2 eggs |
4 tbsp baking powder |
1 tsp salt |
1/4 cup brown sugar |
baking spray |
Directions:
1. Preheat oven to 375 degrees Fahrenheit. Grease muffin trays with baking spray and set aside. 2. Whisk the yogurt, eggs, sugar, honey, almond milk & coconut oil together in a large bowl. 3. In a smaller bowl, mix flour, baking powder, and salt together. 4. Mix the dry ingredients into the wet ones, but don't over-mix (about 12 strokes should do it). 5. Lightly coat the diced strawberries with a bit of flour, and fold into the batter. 6. Fill the muffin cups 2/3 of the way. 7. Bake on the middle rack for 20 minutes, or until golden on top. 8. Drizzle with honey, and enjoy! |
