Fruity and good on bagels, toast or as a unique sandwich spread (I like it spread on toasted pumpernickel, spinkled with sliced almonds topped with baby spinach, sliced fresh strawberries and gruyere). Serving size is ~ 3 Tablespoons Ingredients:
12 ounces firm tofu, drained |
8 tablespoons strawberry preserves, all fruit type like polaner |
2 tablespoons honey |
2 teaspoons lemon juice |
Directions:
1. Combine all ingredients in a food processor and blend until smooth. 2. Scoop mixture into a container for storage in the refrigerator. 3. Use within 2 weeks. |
