A delicious strawberry muffin with a crunchy streusel topping Ingredients:
1 1/2 cup all-purpose flour |
2 teaspoons baking powder |
1/4 teaspoon salt |
1/2 cup sugar |
1 large egg, beaten |
1/2 cup milk |
1/2 cup butter |
1 1/4 teaspoon almond extract |
1 cup sliced fresh strawberries |
streusel topping |
1/2 cup sugar |
1/2 cup chopped blanched almonds, toasted |
1/4 cup all-purpose flour |
2 tablespoons butter |
1/8 teaspoon almond extract |
Directions:
1. Combine flour, baking powder. salt and sugar in a large bowl; make a well in center of mixture. 2. Combine egg, milk, butter and almond extract; add to dry ingredients, stirring just until moistened. 3. Fold in strawberries. 4. Spoon batter in paper-lioned muffin pan, filling 3/4 full. 5. Sprinkle Streusel Topping eveninly over batter. 6. Bake 350 degrees for 20-25 minutes. 7. Cool in pan on a wire rack 10 minutes. 8. remove from pan, and let cool completely on wire rack. 9. Streusel Topping 10. Combine all ingredients in a small bowl: stir well. |
