4 tbs. olive oil |
1 tbs. finely chopped shallot |
3/4 cup ocean spray 100% juice or light fruit and veggie cranberry strawberry banana |
2 tbs. sugar |
1 tbs. red wine vinegar |
t tsp. cornstarch |
salad |
1 ( 6-oz ) package baby spinach leaves |
1 cup sliced fresh strawberries |
1/4 cup slivered almonds, toasted |
Directions:
1. In a small skillet, heat 1 tablespoon of the oil over medium heat. Cook shallot 1 minute or until softened. Stir in remaining dressing ingredients; cook until mixture boils and is thick. Cool to room temperature. Whisk in remaining oil. 2. Divide spinach among 4 salad plates. Top with strawberries. Drizzle with dressing and top with almonds. Serves 4. 3.
