A light and tasty salad, but it is best to use strawberry vinaigrette if you can find it. My adaptation of Barnelli's in Chicago strawberry spinach salad. Ingredients:
3 c baby spinach |
2 tbsp strawberries, canned, heavy syrup pack, solids and liquids |
1 egg, whole - cooked, hard-boiled |
2 tbsp chow mein noodles |
2 tbsp sunflower seeds |
1 oz cheese - gorgonzola |
70 g chicken - strips, crispy |
15 g raspberry vinaigrette |
Directions:
1. Hard boil egg, chop, combine remainder of ingredients, add dressing, toss salad and enjoy. Can be made lighter by using boneless/skinless chicken breast to save on fat and calories. |
