This is a very refreshing salad that everyone seems to enjoy. You could even add chicken to this to make a one dish meal. I got this recipe several years ago from TOH. I like to chill the dressing for a little bit in my Pampered Chef salad dressing bottle that has a stir in it. I Hope you enjoy it. Prep time is cook time and is approximate. It's fairly quick to put together. Ingredients:
8 cups fresh spinach, torn |
1 pint fresh strawberries, sliced |
1/2 cup sugar |
2 tablespoons sesame seeds |
1 tablespoon poppy seed |
1 1/2 teaspoons chopped onions |
1/4 teaspoon worcestershire sauce |
1/4 teaspoon paprika |
1/3 cup unsweetened applesauce |
1/4 cup cider vinegar |
1 tablespoon vegetable oil |
Directions:
1. Arrange spinach and berries on salad plates or in a large bowl. Place the next seven ingredients in a blender; with unit running, add vinegar and oil in a steady stream. Blend until thickened. Drizzle over salad; serve immediately. |
