There are a lot of spinach salad variations, but this is one of my favorites. Ingredients:
1/3 cup apple cider vinegar |
1/3 cup canola oil |
1 tablespoon poppy seed |
1 tablespoon ground mustard |
1 -2 tablespoon sugar |
1 teaspoon salt |
1/2 teaspoon pepper |
4 cups spinach |
2 -3 slices cooked bacon, crumbled |
1 egg, hard boiled and chopped |
1/3 cup sliced strawberry |
2 chopped scallions |
Directions:
1. Combine all dressing ingredients in a jar and shake. 2. Pour dressing over salad mixture and enjoy. |
