Wholesome, sweet, and pretty good for you too - these are a wonderful and flavorful muffin. Ingredients:
1 1/2 cups all-purpose flour |
1/2 cup whole wheat flour |
3/4 cup brown sugar |
1 teaspoon baking powder |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
1 teaspoon cinnamon |
1/4 teaspoon nutmeg |
2 eggs, beaten |
2 tablespoons vegetable oil |
3/4 cup nonfat vanilla yogurt (or strawberry) |
1 cup strawberry, coursely mashed |
Directions:
1. In large bowl, whisk together flours, Splenda, baking powder, baking soda, salt, and spices. 2. In separate bowl, combine eggs, oil, and yogurt until emulsified. 3. Add wet ingredients to dry; mix lightly. 4. Add strawberries and all of berry juice. 5. Mix batter until combined. 6. Pour into greased muffin tin; bake at 425 for 22-25 minutes or until well set. |
